Matt O’Hayer, a serial entrepreneur, embarked on a mission with a deeper purpose. The result was Vital Farms, the largest producer of pasture-raised eggs in the United States. From Carpets to Farms
O’Hayer’s entrepreneurial journey began with a carpet cleaning and janitorial services company at the age of 20. He went on to initiate around 50 businesses, from travel companies to sailboat charters. However, Vital Farms became his most significant endeavor when he pivoted away from traditional entrepreneurship to follow his convictions about ethical farming.

A Vision for Humane Farming
Vital Farms started with a mere 20 Rhode Island Red hens on a 27-acre farm near Austin, Texas. The vision was clear: to raise egg-laying hens in a humane environment and educate other farmers to do the same. In a world where most egg-producing chickens live in cages, often subjected to terrible conditions, O’Hayer aimed to make a difference.

Making Eggs the Ethical Way
Vital Farms’ chickens roam over 108 square feet of farmland each day, foraging for natural grasses and insects. The humane conditions yield not only ethically produced eggs but also a taste that set them apart. Customers were not just buying eggs; they were investing in values that aligned with their own.

In 2009, Vital Farms secured its first major customer – Whole Foods. This was the turning point that set the company on an eight-year journey to expand from Midwest stores to the entire nation. Vital Farms’ success wasn’t solely due to its mission; it was the delicious flavor of the eggs that captivated customers.

Today, the brand appears in more than 24,000 stores nationwide, including Albertsons, Kroger, Publix, Target, and Walmart. A taste for ethical eggs led to increased sales, bringing humane farming practices to more and more consumers.

Growing Beyond a Single Farm
Vital Farms’ goal was never to remain confined to a single farm; they wanted to partner with others to achieve scale and impact. However, expansion came with its challenges. Many farms did not meet Vital Farms’ stringent humane conditions and requirements, which included animal welfare, safety, geographical features like tree coverage, lack of standing water, and outdoor grazing space. Convincing farmers of the value of these requirements was a task in itself.

Challenges and Controversies
Vital Farms’ commitment to animal welfare led to labeling its eggs as “Certified Humane” by the Humane Farm Animal Care organization, and the brand was recommended by the American Society for the Prevention of Cruelty to Animals (ASPCA). However, it also faced controversy.

Groups like People for the Ethical Treatment of Animals (PETA) and consumers alleged that Vital Farms’ ethical and humane branding was misleading. The lawsuit revolved around industry-standard practices such as beak trimming to prevent harm among chickens and obtaining chicks from hatcheries that culled male chicks since they don’t lay eggs. Vital Farms addressed these concerns, but such issues are widespread in the egg industry.

A Fast-Growing Niche
Despite the hurdles and controversies, Vital Farms’ annual sales have soared, nearly quadrupling since first crossing the $100 million mark in 2018. This success places it at the forefront of pasture-raised egg brands in the U.S. However, it still accounts for a small percentage of total U.S. retail egg sales, competing against industry giants with billion-dollar revenues.

The American eggs market is valued at nearly $14 billion, and Vital Farms remains a startup in this arena. Nonetheless, the company projects annual net revenue exceeding $1 billion by 2027. It is a mission-driven enterprise, striving to improve lives and the planet through ethical food production.

The story of Vital Farms is one of an entrepreneur who chose a path less traveled, making a mark by prioritising values and ethical practices above profit. It’s a tale of dedication to a noble cause and the uphill journey of transforming an entire industry for the better.
